Tasty Tuesday ~ Shepherds Pie

Until rather recently I didn't really even know what Shepherd's Pie was.....and it certainly didn't sound like anything I wanted to eat.  Then a fellow blogger posted a recipe and I thought....meat, veggies, mashed potatoes....well that doesn't sound so bad.  I had planned to use her recipe but ended up finding a different one from one of my favorite sites, Kraft.com.  If you haven't been there, you should really check it out, they have tons of great recipe ideas!  This one ended up being a great success.  When I first pulled it out of the oven, the hubs was a bit leery....said it looked like Chicken Pot Pie, which apparently he doesn't like.  He took a serving, kind of poked at it with his fork....then continued to devour the rest of it giving it two thumbs up!  Enjoy!

Cheesy Shepherd's Pie
1 pkt Velveeta Cheesy Mashed Potatoes (I never found these, so I used Betty Crocker cheddar and garlic instead, they were awesome)
1 lb lean ground beef
1 cup frozen mixed veggies (I used corn, peas, carrots, green beans and added more than a cup)
1 cup beef gravy (I used the entire 12 oz jar)
Onion and garlic (not in the original recipe...but figured it couldn't hurt)

Heat oven to 375
Prepare potatoes as directed on the box; meanwhile brown meat, onion and garlic in large skillet; drain.
Add vegetables and gravy to meat; mix well.  Spoon into 8-inch square baking dish; cover with potatoes
Bake 20-25 min or until heated through and lightly browned

Bon Appetite!

YAY! I would love to meet up with you! I emailed Lindsey last night about another meet up because I was thinking about having the girls over to my house. If not, we can always go out because that is fun too!!
