It's been awhile since I've whipped up any sweet treats in the kitchen.
Weight Watchers put a bit of a damper on my baking itch.
Well when I saw THIS recipe on Pinterest, I knew it was time to come out of retirement.
Holy amazing.
Here's the recipe exactly as originally posted.
I wouldn't change a thing!
Caramel Apple Cider Cookies
what you need
1 cup granulated sugar
1/2 teaspoon salt
1 (7.4 oz) box Alpine Spiced Apples Cider Drink Mix {Not sugar free}
2 eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon baking powder
3 cups all purpose flour
1 (14 oz) bag Kraft Caramels
1. Preheat oven to 350 degrees. Line cookie sheets with parchment paper.
2. In stand mixer, cream together butter, sugar, salt and all 10 packets of apple cider mix until smooth and fluffy. Beat in eggs and vanilla extract, then mix in baking soda and baking powder. Add the flour and mix until just combined.
3. With a standard size cookie scoop, scoop the dough, scraping off the excess on the side of the bowl. Flatten the dough with your thumb and place the caramel in the center. Work the dough around the caramel sealing well. Place on cookie sheet spacing them about 2 inches apart. {I found the dough to be really sticky, the less you can handle it the better}
4. Bake 12-14 minutes {Mine took 18-20} or until golden brown around the edges. After baking, carefully slide the parchment with the cookies onto the counter. Let cool until they are no longer soft, but still slightly warm. Twist gently to remove and cool the rest of the way upside down on the parchment or in a cooling rack.

OMG. I'm pretty sure I've had these pinned for awhile. Thanks a LOT for letting me know that they're as good as I'd imagined they would be. I think I'm gaining weight just THINKING about them!!
