Tasty Tuesday ~ Italian Chicken

I've seen this recipe floating around Pinterest and the blogosphere for awhile now and finally got around to trying it.  Holy cow was it delicious!  There seems to be a few variations, I went with the one found at The Girl Who Ate Everything.  It is maybe the easiest new recipe I've tried in a while.  Seriously there are 4 ingredients.  FOUR.  And it cooks in the crockpot.  I think a monkey could make this dinner.  It gets bonus points for being both toddler and husband friendly.  Plus it was just as good the next day and I usually don't do reheated chicken.  Tasted just as good as the first time!  I used 98% fat free soup and the 1/3 less fat cream cheese to lighten it up a bit.  With a cup of whole grain rotini it made for a slightly higher points meal than I usually indulge in, but it was worth every bite!  Enjoy!

Crockpot Italian Chicken
what you need:
4 chicken breasts
1 packet Zesty Italian seasoning
1 can Cream of Chicken Soup
1 8 oz cream cheese

what you do:
Place chicken into crockpot.  (Mine were still frozen)  Sprinkle with packet of Italian Seasoning.  Cook soup and cream cheese in a small pot over low heat until smooth -- pour over chicken.  Cook on low for 4-5 hours.  You can shred, cut or leave the chicken breasts whole.  Serve over rice or pasta.

Serves 4. 
9 points plus per serving when made with 4oz chicken breasts and lower fat soup and cream cheese.  (PPV does NOT include the rice or pasta)

Yum! I love anything that involves a crockpot! Since it also has pasta, this is definitely a recipe I will try!
