And we're leavin' on a jet plane....

Ok, so technically we're driving, but I didn't want to totally botch the song. Tomorrow morning we officially pack up the hubs for Kansas City. We're going to pick up his mom and the jet ski bright and early hoping to be back on the road by 6am. Yuck. The plan is to drive straight to my parents lake house for the weekend and then on Sunday go to KC. I have a meet and greet sort of interview with a dental office on Monday and then me and my mother in law will drive back to Ohio...sans my hubby and the pups!

Hope everyone has a GREAT 4th of July weekend!! I leave you with two of my favorite summertime recipes to tide you over until my return!

Summer Beer
1 can frozen lemonade concentrate
Vodka
3 cans Light Beer

In large pitcher empty frozen lemonade. Fill lemonade can with vodka, add to pitcher. Mix. Add 3 beers. Enjoy! It sounds kind of weird, but believe me, its so good on a hot summer day.

Grilled Veggies
1 Zuchinni
1 Yellow Squash
1 Red Pepper
Pea Pods or Sugar Snap Peas
(you could use any veggies really, these are just my staples)
Olive Oil
Seasoning of your choice


Cut all the veggies and put in mixing bowl. Toss with olive oil and seasoning. Put everything in a grill pan, cook on med to med high heat. Check often and flip so bottom veggies don't burn. Cook to desired tenderness....about 8-10 minutes.

Those veggies look so yummy! Is the pan like a grilled panini type pan, or something else? I want to try this on my own and don't want to botch it. :)

That is soo crazy...I just had the summer beer the other night..I mixed it with Minute Maid limeade...it tastes just as good!! Have fun on your trip and good luck on Monday!
